Well, got my MES40 seasoned up yesterday, so it was off to Costco this morning. Between all the meat, cheese, nuts, and other stuff that I actually needed I spent close to $500!!! Well, and I did get a Vacuum Saver and a bunch of packing material, so that wasn't all food. Going to be well fed though!! Anyway, I prepped 3 racks of baby backs and just stuck them into the MES with the AMNS full of Hickory. Rubbed w/ Arthur Bryant's Rib Rub and yellow mustard. In @ 225 using 2-2-1.
