Well, got my MES40 seasoned up yesterday, so it was off to Costco this morning. Between all the meat, cheese, nuts, and other stuff that I actually needed I spent close to $500!!! Well, and I did get a Vacuum Saver and a bunch of packing material, so that wasn't all food. Going to be well fed though!! Anyway, I prepped 3 racks of baby backs and just stuck them into the MES with the AMNS full of Hickory. Rubbed w/ Arthur Bryant's Rib Rub and yellow mustard. In @ 225 using 2-2-1. More pics to follow when they're done.
EDIT: PICS SHOULD BE FIXED FOR THOSE THAT COULDN'T VIEW
Is it just me or my computer? Those pics are super skinny & unviewable??
Not sure, they look fine on mine. This is the first time I've used Picasa to host images though, so I really don't know. They were sized to 800 pixels high x 479 wide. Should look ok.

I can see them just fine. Those should be great!
I can't wait to see how these compare to the ones I did just like this on my ECB.

I'm seeing the same thing, and I'm I'm using XP Pro version 7.When I click on a pic, it takes me to a Picasa site and the pic is viewable.

I'm with Rich on this one. Long and unviewable and I click on them and I go to picasso too. Then I can see them.

Same here. Went to picasso and peeked his whole bbq gallery.

Some good looking chow.

You might try 3-1-1 to get a little more bark. I don't know about the rub you used but I think there needs to be a good amount of sugar in it to create some of the bark. I'm sure you will get more answers on this before long. I didn't have any trouble seeing the Q-view. It was all right in your post.

Yes, I think you are correct. I just used some store bought stuff this time, but last time when I got the good bark I used this:

1/4 cup turbinado sugar

1/4 cup salt free chili powder

2 teaspoons of ground black pepper

2 teaspoon of cayenne pepper

1 teaspoon of ground white pepper

I don't think there was much, if any, sugar in the stuff I used this time. Next time I'll have to be a little less lazy!! Or just add some sugar to the store bought stuff!

I fixed all the pics in the above posts. Went back to Photobucket. Everyone should be able to view them now.

They do look good from here!  Sounds like you went on the kind of shopping spree I can deal with! lol

I could think of no better way to spend a little bit of my bonus

I hear ya!  Trying to disregard the wife's idea's on how to spend mine! lol  I really think I deserve a WSM!  It is after all "my" bonus.  LOL
Yeah, I try to tell my wife the same thing. This year, there was plenty of bonus to go around, which I'm extremely grateful for in this economy.
