Nothing of consequence here, rained yesterday and still very wet. Maybe I will clean the pond as it still looks like pea soup. I hate that, usually I can see 4' down to the bottom.
 
MY wife has requested steak au poivre, sauteed shrooms and baked potato. As for dessert, she left that open, so think Ill make her some brown butter bourbon blondies with an appropriate ice cream to top it off

Not this trip.I haven't done any surf casting since I was an 8 YO who spent the whole every summer on Long Island Sound. I still teach climbing and work part-time for my county EMS department and have some work friends who are serious surf fishermen. We're trying to coordinate a trip to the OBX together so they can get me up to speed.

Happily, the bride is more than OK with it since she's the principal beneficiary......

Like several others, I'm in the "Doing Nothing" camp. Our daughter decided to treat mom to a 3 day trip to Las Vegas starting this morning. As a courtesy, she asked me if I was interested in joining them. I declined.
She booked a suite at the Aria hotel and I said that I would handle the air fare. Using 216K accumulated miles with American Airlines I got 2 first class round trip tickets between Chicago and Vegas. I also said I would cover dinner one night at a favorite restaurant, Nobu. With drinks, wine, and food, that will be $400+ for the 2 of them.
All in all, I consider my contribution a bargain. It's so quiet in here. Just me and my dog, Mo. Life is good.

I always need a few days of vacation after vacation, I can relate 100%.
I always end our trips at least 2 days before I need to return to work just to relax. I'd like to relax on a beach with a red solo cup but my wide wants to do things.

My parents have been gone for 50 years and my MIL passed away 12 years ago at the age of 92. Nancy and I don't usually pay attention to Mother's and Father's day for each other but since I do most of the fancy cooking around home and all of it on camping trips the last few years have been different.

For the third year in a row we're 6 hours from home in the camper at Oregon Inlet campground on the North Carolina Outer Banks. Last year I made roasted stuffed lobster tails the day before Mother's Day. I don't remember what I made on Mother's Day.

Yesterday I made pan seared fresh scallops and angel hair pasta with a browned butter, sage and lemon cream sauce. She woke up this morning still raving about it so I've been informed that more lemon sauce pasta is in our future. Probably with shrimp or jumbo lump crab since finding good dry scallops, frozen or fresh, in our part of the foothills of the Blue Ridge is like finding both a unicorn and a hen with teeth in the same grocery store aisle.

Today for Mother's Day, Nancy asked for an easy one; batter fried red drum so I'm making fish tacos. And since I need to get some red drum I better get busy......

I'm spoiled as far as seafood goes, my family doesn't commercial fish or Monger anymore, but living as close to the ocean as we do and still having friends that are commercial fishermen really pays off in the fresh seafood department. I could damn near live off of seafood, and damn near did growing up, between my Noni's restaurants and uncles and Gramp's either fishing or selling seafood.

I miss fresh scallops right out of the water, I used to eat them raw right out of the shell.
Now all I get is the flash frozen Scallops from Costco and Restaurant Supply, they are good grilled, but not raw.


Man, I wish I was camping right across from you, I'm extremely jealous of you.
We just sold our 5th wheel trailer, and I'm already missing it. It was just too hard to back into my side yard RV parking, the trailer only cleared the roof rain gutters by 2" and the side fence by less than 6''. I'll prob. just by a 22' bumper pull trailer this time so I can get it close then use one of these to get it behind the fence.

And @Elf@shore , remember the good times, it's hard to lose them... but they made us who we are! A couple weeks ago we were gonna have my grandaughter's 1st birthday. My daughter ran out of coffee creamer and asked my wife if she had any. She got out some my mom used to drink and the smell of that cup of coffee sent my daughter into tears. So much that she had to hug my wife. When my wife left the room my daughter cried again and needed a hug from me. My mom passed April 1st of 2020... miss her dearly, but it does get better! My thoughts at the time were not of sadness, but what my mom meant to my daughter and how she helped to make her into the person she is today. And yes, writing that brought some tears!

I like your style, we'd get along just fine!!!
I'd go fishing or hang out in the yard grill'in up a fat Porterhouse or Ribeye with a loaded baked potato and a few ice cold bier's or bourbon's.:emoji_thumbsup:

Pork carnitas incoming. Have a pot of pintos going with the bone I took out of the butt. A few avacodos I still need to convert to guacamole. Baked some cookies, almost go time!

She can still clean up after you though. LOL!!!
Momma don't mind cleanin up after it's over with. Kids and grandkids have been here!
Now me preppin everything with raw meat everywhere. She'll start saying something bout cleaning. If I stop and use the restroom! LoL
 
I'm cooking a few cold-water lobster tails...we miss the fresh cold-water lobster that I would catch while diving on shipwrecks in the northeast (they love hiding in the myriad nooks and crannies of a wreck, and I was diving a lot at the time). One doesn't see a lot of lobster showing up in the cold cases in Idaho, just the occasional frozen tail.

Side will be simple; fresh corn on the cob, boiled new potatoes, and sautéed mushrooms. I've got a few morels and a big coral mushroom from a foraging trip yesterday.

I had a Baker Cyst rupture in my right knee a month ago. After 4 days of sitting in the car, it will take a couple of weeks to get back on track for the 4 month recovery.

Smoked pepperoni and beef jerky yesterday. I may start a thread tomorrow. But today I ground up some chicken breast and made chicken meat balls. Unfortunately didn’t have any fresh peeled garlic. Just the minced stuff in a jar. Forgot to get the good stuff. Just doing a single fine grind so not really any need for a tray on top. Grinded all the breasts whole without breaking them down
