Smoked side ribs for 3 hrs, first at 260F and then dropped it to 250F as weather did not deteriorate like I was concerned about.

Seasoned up ribs and put in smoker for 4 hrs at 260F. I used Maple.
Turned out very tender and tasty. I was a little concerned as have had issues with them not being done. Thankfully, it worked today.
Served with twice baked potato and made batch of bbq sauce.

Put maille mustard on a rack of st louis cut ribs and coated with basic bbq rub. Put in the smoker for 3 hrs at 250F using Jack Daniel's wood chips.

Tomorrow is officially Thanksgiving DAy in Canada. As my daughter will be working then, we held the meal today. Brined a bone in turkey breast overnight. Smoked it in MES for 4 1/2 hrs at 240F using hickory. It needed a little oven time as not quite done.

Grilled up several steaks and several pieces of sweet pepper. Had put mesquite wood on.
Tasty! Grilled just right, meat had charcoal and mesquite smoke flavour.

Smoked a small piece of brisket this afternoon, about 4 1/2 lbs. Where we get our meat will cut to suit.

Smoked a 5 lb picnic roast at 275F in my MES for 8 hours. Made our favourite bbq sauce, tweaked with a bit of seasoning. Served on toasted buns with sliced cheese and a side cucumber salad. Yumm!

Smoked a rack of side ribs. They went in MES for 2 1/2 hrs at 250F using maple wood chips. At 2 hr mark, I got offset barrel smoker going and put ribs on indirect for 1/2 hour. We had a pasta salad leftover from last nights dinner and that along with some cherry tomatoes was our side dish.

Made a beef burger seasoned with paprika, garlic, tarragon and mustard and some chopped up shallot.
We used tortillas which I toast on the grill for a few seconds instead of burger buns. Topped with blue cheese. Grilled onion rings. I was using mesquite wood chips.

Made a pizza from scratch (ok, we buy the dough). Veggies, Salami, CHEESE and black olives.
Put on indirect in OKI Joe for about 40 minutes. Dough comes out for most part fairly light and toppings are flavourful.

Tonight was a pork burger and I had some sweet pepper left over from last night, diced that up and some white onion and mixed in along with thyme seasoning. All three of us liked it! Served it with grilled onion rings.
I smoked a roast this afternoon for about 4 hrs at 250F in my my MES. Used hickory. At the 3 1/2 hr mark, started my offset (OKI Joe) and transferred the roast onto indirect for 1/4 hr.
It gets a nice smoke taste.
After I do all this of course I read from last time I did this to wrap the meat...
