Smoked a rack of side ribs. They went in MES for 2 1/2 hrs at 250F using maple wood chips. At 2 hr mark, I got offset barrel smoker going and put ribs on indirect for 1/2 hour. We had a pasta salad leftover from last nights dinner and that along with some cherry tomatoes was our side dish.
FYI, my t-shirt says "You're Bacon me crazy". My wife's one is "I like my pork pulled and my belly rubbed" Our favourite butcher had these for sale in his store a few years back. :D
