Tri tip for me, by far the most requested... and i think BB's would be a close second, although the PP is right up there now.
 
Pickled and smoked turkeys and chickens for the most unique flavors; sausages for stock-in-trade big feeds, standing rib for best-of-class.
 
Pulled pork fer it's infinite variety a uses, ribs cause everbody likes ribs, pork loin fer canadian bacon an sliced smoked loin, shoulders fer hams, butts fer grindin inta sausage an makin shoulder bacon.

Close second, poultry.
 
Hard to decide. I have made great Rack of Pork, Pulled Pork and Ribs. Also love fatties and Chuckies though.Brisket is coming when the weather warms up.
 
Well I think I'm pretty darn good at my ribs and chuckies are always great, especially Italian Beef from a chuckie but the greatest accomplishments and the one people crave is my homemade chipotle pastrami.

My family & my personal favs are my brisket & pulled pork but for my clients it is a toss up between pork ribs and beef tenderloin. So I guess my poll vote would have to be beef & pork.

I catered a party last night that was a Greek/Mediterranean menu but the client HAD to have the Tenderloin too!
 
BACON !

Ever since I learned how on this forum !

Can't make bacon forever though, so I guess it's ribs & pulled pork butt, until I run out of bacon.

Just the other day, I learned you can even make brussel sprouts edible if you wrap bacon around the little cabbage heads.

Well it's not listed but my most requested item is my Wicked Baked Beans.
Converstaions around my house goes something like this:

Kids: "Dad, what are you smoking?"
Me: "Pork butt"
Kids: "Are you doing your beans?"

Kids: "Dad, what are you smoking?"
Me: "Ribs"
Kids: "Are you doing your beans?"

Kids: "Dad, what are you smoking?"
Me: "Brisket"
Kids: "Are you doing your beans?"

Kids: "Dad, what are you smoking?"
Me: "Chicken"
Kids: "Are you doing your beans?"

So this weekend for the SIL's birthday, I'm smoking some spares, a couple of yard birds and a couple of butts. And yes, the SIL asked "Are you doing your beans?" Yes Chadder, I'm doing my beans.

For those of you that haven't tried Dutch's beans, you really need to. They are stupid easy to do and delicious.
 
Now I think my smoke anything can hold it's own I feel like I can produce great pork more consistently then zi can any other meat. But I'm getting better with the brisket all the time.
 
i voted pork.because i find myself smoking pork shoulder for pulled pork and smoking ribs because everyone enjoys it and its really not too expensive.my absolute fave is a brisket..i love smoked brisket but it is a bit expensive in my part of the country..and dutches wicked beans are usually on the smoker along with the meat..also love atomic buffalo turds and fatties and corn on the cob and chicken and turkey.........i think i need professional help..i am a smoking addict...lol
