I don't know...Sounds like it was under cooked or too much Smoke. Of course too much Acid in the Injection mix may cause an inverse reaction to the low pH. The result would be a premature denaturing of the meat protein. Either way SPOG would have been the better choice with Cherry wood for color...JJ
