A bit of a surprise as package was labelled as pork belly. Whoops! This is only the 2nd time had them cut like this. My wife says this is the cut she used to get with her late hisband and why she ikes them so much. WE were getting something labelled as texas roast. Anywhooo, smoked them for about 4 hours, initially at 260F and then dropped to 240F when realized cooking faster than what I expected. Made up bbq sauce (whiskey, brown sugar, balsamic vinegar and chili sauce, equal parts). Much tastier than the texas roasts we were using. Smoked a baking potato which had usual toppings.
