My son and I cater whole hog roasts. I live in Chicago and most of our customers have never been to a hog roast. I’m here to learn and try to make a decision on a second direct heat hog roaster. Here’s what I did 20 pigs with last year. Don’t laugh it works like a dream. Just don’t want another one.

That is cool! Welcome to SMF from North Texas! I have done a few whole hogs, learned from my Dad to do them in the ground, but have rented a charcoal/wood hog cooker a couple times for ease. Love doing them, just a lot of work. Have not done a whole hog in 10+ years...
