My brother in law  had a cow sluagtered  this spring and this is one of the pieces he gave me. Im just not sure what to do with it!  The right side seems to be very tender. The left side is dominated by the bone. Seems to be part of a joint. Bottom right are 3 short pieces of bone the size of pork ribs cross cut so are 1 1/2 to 2 inches long. Any ideas?  Thanks Mike

I was gonna say hangar steak but it's prob not cause hangar is really small and lean and not attachedto anything....and i wouldn't give up my hangar steak!:drool

The whole thing is about an inch and a half thick.  The 'tender' part is about 6x7 inches.

There looks like quite a bit of connective tissue and with the large bone I would make a POT ROAST out of that badboy. Send a PM if you need a recipe...JJ
