Hi All,
My name is Gareth and I'm from Wales UK. I'm totally new to the world of smoking meats and fish. I'm an Engineer for a living and although at the moment I'm using a generic cylindrical smoker I purchased from EBay I'd like to make my own smoker when I understand smoking a little better.
I also love Flyfishing so any tips on smoking Trout would be great fully received.

So that we can help you to create the smoker that is right for you, can you please let us have some more information about what you are hoping to do. We can recommend some all-round commercial smokers but we also have members on here experienced in building their own.

Which type of smoker did you buy? If it was from EBay then it was probably a Brinkmann? A lot of people start with these and then move on to larger bullet smokers (e.g. Weber WSM or ProQ Frontier). These are good general purpose smokers for things like Brisket, Ribs, Pulled Pork etc and can also be used for cold smoking fish, cheese etc. If you are looking to do a lot of cold smoking then you may want to look at building a more specialist cold smoker. The large offset pipe smokers are also good if you are looking to cater for the masses.

You told us that you like fishing and are looking to smoke your Trout. These are good both hot and cold smoked and we can help you with both. A couple of links to get you started...
