I just received a Weber Smokey Mountain 18.5" for Christmas, and am excited to enter the world of smoking meats. Keep in mind, I am a newbie. I just purchased a few bags of different wood chunks at a local Tractor Supply, when I had a lightbulb moment. I have access to some well stored, rough sawn 4"x4"x36" maple. They are air dried, and have been stored in a well-ventilated old building for the past 10 years or so. I assume they have a low moisture content. They don't have any rot, are very solid & heavy, but do have some flawed grain. I wonder if they might come in useful for my smoker if I cut them into chunks? I am unsure if well stored, air dried maple would be looked at as a good thing, or bad thing. For those of you with experience with various wood chunks, what might you think? Did I just strike gold? Or would I be wasting my time with them? Note: I will be using charcoal in the minion style, and placing just a few wood chunks on top.
