well,, my first pizza dough making was less than successful. most likely pilot error.
Doesn't always come out , that's for sure .
I dug this up if you're interested . This is how I was doing it before my Son got the pizza oven .
There's a recipe and some info at the bottom of the 1st post . May or may not be useful .
BTW , I stopped trying to launch of a peel a long time ago . I use non stick foil , then pull the foil out when the bottom sets .

gonna tray that foil thing. makes sense with a 500 degree stone. previously I've used balls from our local italian market... new to this TY

I looked into those aftermarket spiral dough hooks; there were several of them on Amazon. Seems like a great idea, but I saw many reviews that said the hooks that were supposed to be for the 4.5 qt bowls were too long, and really scraped up the bottoms of the bowls.
When making bread dough with the regular KA hook, it seems that the dough just eventually clings to it and spins around on it, instead of getting kneaded.

Yep. Before I ordered one, I looked at several and saw a lot of complaints about too short, too long, etc.

After 20 years, I couldn't tell you the size of my KA bowl. So, I measured the OEM C-hook from top to bottom. Then, before I ordered one on Amazon, I looked for a seller that provided a picture with the exact measurements of the hook I'd be buying. Found one that fit the length of the C-hook and ordered it. Worked like a charm.

Let me tell you, this forum is close to my only public social media interaction. Those baking people are a snarky bunch. I didn't post only read. all i wanted to know was approx weight of a dough ball for a 12-14" pizza, back to the story. I used a recipe from a trusted source. Tipo 00 flour is a prerequisite.
anyway did a 36 hour cold fermentation. dough looked good. I use a peel to transfer pizza to a 20" stone. Even with a good bed of cornmeal for friction control the dough was so"wet" it would not slide off the peel. needless to say I have no pictures of my malformed pizza. Thr flavor was great and the dough was tasty as I made a batch of garlic knots with some extra, and they were fablulous. I will work on my flour/water ratios next time. Live and learn.

This is the Dough hook that came with the lift bowl mixers . It actually kneads and stretches the dough . Like you said the " C " hook lifts the dough out of the bowl .

I was looking for the chutes to add ingredients , and ended up with an aftermarket .
It works good for eggs and liquids . Flour gets all over the place .

Posting because I just went through this last Christmas buying these as gifts .
I think you're best off to get the real deal parts from Kitchenaid , but even at that It's hard to know what you need . That's why I ended up with the aftermarket chute .
Couldn't figure out which chute fit what bowl .

Anyway , if you mix a lot of bread dough , that hook is the one to have .
I like that chute, did you get on Amazon? Kind of a silly question coming from a guy that only uses his mixer once or twice a yr. LOL
Actually that is the main reason I don't care for the mixer, it is hard to add things while it is running, one of those chutes might be just what I kneed*.
 
I think I remember making more messes with the chute lol. It's rare that we use it these days, maybe once every 2-4 months. yep slackers :emoji_laughing:

I have these sitting out on the counter . Makes it easy to grab and use . Mixing up a couple batches of pizza dough today , and some sourdough for tomorrow .

I don't suppose you could look up your purchase history and find it? It would save some of us a lot of trouble.
 
I was getting ready to move ours from the Kitchen counter out to our storage shed.
Then, our youngest started using it daily.
Even bought more attachments.
It has to be well over 35 years old.

We were in Las Vegas to visit Granny Tater in the old folks home and our youngest was 7 years old.
I took him to the last of the great old diners and did his taste buds ever pop. He was blown away by quality. Everything old school cooking. Flavor blasts.

I just happened to have a friend, the head of food and beverage from Club Med along too. He was blown away as well.
Now years older the son makes all his own meals. Nothing instant, everything from scratch and the mixer plays a big part in it especially with all the attachments.

That diner?
Bulldozed for a Valet Parking/Lyft pick up area.
 
I am not sure why/how great little eatery's fade away, I suppose it happens as folks age out and younger folks have no interest in working. We had a truck stop that had good food at a great price for a lot of years, it faded away and the closest greasy spoon is about 20 miles away. Grand daughter works at a restaurant after school and the weekends but it doesn't have the same appeal for some reason. Decent food but portions have shrunk after covid hit and have noticed that at a lot of places.

Need to get your son hooked on smoking stuff, hard to smoke for just 1 person :emoji_laughing: , Proud to read about young folks liking home cooked meals and liking cooking, to many taco bell drive throughs lol

Get some non stick and make sure you use the non stick side .

That's the problem, the kitchen in this new to us house is the worst kitchen I've ever seen, very limited counter space, it drives me nuts.

And mine is avacado green !! 40 years old still works great.
I bought a refurbished one at least 25-30 years ago, still going strong. Bought a new one last year and it sounded broken right out of the box; grinding, clunking, like gears were skipping...got worse the longer it ran (which only minutes). Returned it immediately and kept the old one. Sadly I have little faith in new appliances.
