Anybody ever used a little oil on the wings on the vortex? I’ve had some good success without it but there is definitely a texture with fried wings that I love. I had some at a joint the other week who smoked the wings and then flash fried them and they were excellent. Made me wonder if some olive oil on the wings before using the vortex would have a similar impact. Anybody tried?
 
I do the same as Farmer. I put the wings in a zip lock bag, coat with EVOO, and Montreal chicken seasoning. Massage them to cover all the wings & let them sit in the fridge for a few hours, or freeze them, so all I have to do is thaw them & put them on the vortex. Haven’t ever had a bad wing from the kettle with a vortex.

thanks all - I dried them overnight a couple times recently - not good. Think too much if a pellicle formed and ruined them.
 
When i use the vortex, i crack the lid an inch open...temp gets up to 600--but still after 40 mins, would like the skin to be more crispier....they are good but not like kfc crispy. I use only dry rub and oil them before--flip 30 mins in....
