Wings ........ I beat the Super Bowl rush

The wings and the poppers look terrific, Neighbor! Another reminder that I've been wanting to do some wings myself. Mrs. Red doesn't love 'em the way I do, so I don't make them as often as I might. My Vortex has a layer of dust on it lol! I think it's about time to change that!

And smoked mine yesterday. With some poppers, or ABT's, or whatever ya wanna call them.

Lined the bottom of my 26 Kettle with foil. Wings have a lot of drippings and it keeps the Kettle clean, but also redirects air up through the middle of the Vortex.

With a full chimney of B&B oak briquettes.

Gonna use Kosmos Buffalo Wing Dust on them, he recommends smoking them naked then adding the Wing Dust. But I put on a light coat of his SPG.

And I put a big chunk of pecan over the fire.

The high temp created by the Vortex, burns the pecan at a high enough temp to get a nice thin blue smoke I'm using the ThermoWorks ThermoWorks Smoke on this cook. Probe is at grate level. Dome gauge is almost directly over the Vortex.

Pulled the wings at poppers after 25 minutes. Put the wings in a bowl to mix in the Kosmos Wing Dust. I ended up putting too much dust on as these were very hot, but still had great flavor.

I can't think of a reason why Kenji's method here couldn't be applied, using a smoker instead of an oven. I ran the 26 Kettle at same temp he ran his oven .

Basically, he uses baking powder, corn starch, and salt, the day before and lets them air in the fridge over night.
