And I put a big chunk of pecan over the fire.
The high temp created by the Vortex, burns the pecan at a high enough temp to get a nice thin blue smoke I'm using the @ThermoWorks Smoke on this cook. Probe is at grate level. Dome gauge is almost directly over the Vortex.
Pulled the wings at poppers after 25 minutes. Put the wings in a bowl to mix in the Kosmos Wing Dust. I ended up putting too much dust on as these were very hot, but still had great flavor.
