And smoked mine yesterday. With some poppers, or ABT's, or whatever ya wanna call them.

Lined the bottom of my 26 Kettle with foil. Wings have a lot of drippings and it keeps the Kettle clean, but also redirects air up through the middle of the Vortex.

With a full chimney of B&B oak briquettes.

Gonna use Kosmos Buffalo Wing Dust on them, he recommends smoking them naked then adding the Wing Dust. But I put on a light coat of his SPG.

And I put a big chunk of pecan over the fire.

The high temp created by the Vortex, burns the pecan at a high enough temp to get a nice thin blue smoke I'm using the ThermoWorks ThermoWorks Smoke on this cook. Probe is at grate level. Dome gauge is almost directly over the Vortex.

Pulled the wings at poppers after 25 minutes. Put the wings in a bowl to mix in the Kosmos Wing Dust. I ended up putting too much dust on as these were very hot, but still had great flavor.

Damn fine looking wings Okie… my son loves wings and he’d definitely make a plate of them disappear! Nice cook and like the foil liner… that’s a great idea! 👍

Congrats on a well deserved ride!

so your total cook time was only 25 mins on the wings, both the wings in the poppers were 25 mins?

Yes, 25 minutes is pretty average. The bacon on the poppers was well rendered.

Fantastic color on those wings, Okie. Very well done and congrats on the ride around the spinner.

Fantastic looking wings SO. I've only used the Vortex in my 22" kettle. Now that I know it will work in the 26"er I'll be better prepped for larger parties. BTW is that the medium or large vortex? I ask because mines the medium.

Point for sure

Its a medium.

I like the 26" not just for capacity, but it allows me to get the wings further away from the coal bed in the Vortex. There's a lot of radiant heat around it.

And I think the convection is better in the 26. With all the air rising up through the Vortex, then hitting the dome lid and circulating back down the outside. That's the beauty of a Kettle, the shape creates a lot of convection. The downside for smoking, is getting meats far enough away from the coal bed.
