Ground up 15 pounds of butt yesterday..

Separated into 2 lots ..one 10 lbs and one 5 lbs..

10 of kielbasa and 5 of sweet Italian...

Mixed in the kielbasa mix that was sent to me from the King of Kielbasa...  Boyjko!!!!!

Added 4 large garlic cloves from DaveOmaks garden as Joe said to do  (well... he said 2 cloves) ...  minced in mini processor with 3/4 cup water..

Covered with plastic wrap and into the fridge for the nite....

Today I stuffed the kielbasa first into 38/42 hog casings then mixed the Italian and stuffed that too.

What was left from the stuffing I mixed together and hand stuffed it..looked kinda strange with the fresh and cured stuff together...

The kielbasa is on racks in the fridge drying out for a trip to the smoker and the Italian is drying out to get vac packed..

I cooked the combo stuff on the stove in water then fried with butter to 160...very tasty!!!

Dang-I really need to get settled so I can break out the grinder and stuffer.  That store bought stuff really isn't making the grade.

I have some Joe's mix, I will be giving it a shot next time I make Kielbasa. That all looks really good and you can see the difference that Elec Stuffer makes...JJ

Thanks... the electric stuffer for me is a great helper...I have lots of broken and metal bones in my shoulder and rib cage..so it gets uncomfortable with any kind of repetitive motion..
