During the stall, can the internal temp actually come down a couple of degrees before kicking back up again.thanks
 
It doesn't happen every time but quite often.If you are a wrapper,it's a sure sign that it's time to swaddle up.
 
Yep it can, Almost everything I have done will drop a couple at least for a period of time.
 
If you cook at a high enough temp you won’t really experience the stall.
I try to cook between 275-300 and never experience it.
When I first started smoking I did experience the stall but then saw the light and took both the stall out of play as well as shortened the cook time with no side effects whatsoever. Try it sometime.
I truly don’t understand the guys who say, I smoked this for 18+ hours. No reason IMO to eve have meat on a smoker that long. To each his own!!
 
Low and slow fast and furious will always be a never ending debate.

Low and slow gives more drinking time. :D

When I do low & slow I do it overnight with my WSM Guru setup.
But if I have the time & since I'm retired I usually do I like to get up early in the morning & fire up the Lang & run hot & fast. The Lang will run at 270-280 all day long with just adding a split every 45 minutes or so. I usually make a day of it, starting at 4:00AM getting the fire going & around 6:00 AM I make some bacon & eggs in a CI pan on the Lang firebox. Of course I have to have a beer with breakfast!! Then I'll mess around with some yard work & keep feeding the beast. And about noon we will have some Reubens or grilled cheese sandwiches , again in the CI pan on the firebox, with a couple of beers of course. Then a shower is in order & usually our friends start showing up around 2 PM, just about the time I have some snacks ready & the real drinking begins. By 4 PM or so the butt or brisket is done & after a short rest & some more drinking. We slice or pull it & eat. That is a real good day for me & I hope to have many more like that!!!
