Smoking Fanatic
for someone that smokes and grills meat as much as I do, I'm blessed to have a wife that is very methodical about the leftovers. We have a 3 freezer method, a deep freezer, a beer fridge freezer, and finally a kitchen fridge freezer. New leftovers land in the deep freeze and the oldest come from the kitchen freezer.
Mrs philpom like to be predictable when it comes to meals so taco Tuesday became a norm for us. (Looking for more ideas throught the week thay are as varied as tacos
).These are smoked pork carnitas, probably smoked last fall. I usually smoke the butt for this in a pan on a bed of o ion with a blend of citrus juice and spice
Served with ghost pepper salsa ( home grown)
