for someone that smokes and grills meat as much as I do, I'm blessed to have a wife that is very methodical about the leftovers. We have a 3 freezer method, a deep freezer, a beer fridge freezer, and finally a kitchen fridge freezer. New leftovers land in the deep freeze and the oldest come from the kitchen freezer.

These are smoked pork carnitas, probably smoked last fall. I usually smoke the butt for this in a pan on a bed of o ion with a blend of citrus juice and spice
Served with ghost pepper salsa ( home grown)
