Today's fun was a rolled pork loin seasoned with salt, pepper, minced onion, garlic, savory, oregano, and basil. Stuffed it with spinach, bacon, back bacon, parmesan, mozzarella, and provolone. Smoked it to an IT of 155 over cherry and served it up with homemade gnocchi with peppers and zucchini with an olive salad.

Seriously in the top 5 things that have ever come out of any of my smokers.
 
My goodness that looks grand. I wish I was confident and comfortable enough to do a stuffed pork roll in the smoker. Maybe with more study here, I will. Congratulations so much. Don.

Thank you everyone. I really appreciate the likes and comments. My family managed to reduce a 6 and a half pound piece of meat to 1 pound of leftovers in about 30 minutes. Must be I'm learning something here and doing things better.
