Good evening y'all. I am smoking a first for me. I took some beef otalian sausage i made and browned it up 1lb worth, a yellow and red onion, mushrooms, carrot, chayote, wild rice, spinach, and sautéed them all up after browning the meat. I then added chicken stock and half and half and a cup of sharp cheddar. I did fresh sage, thyme, rosemary chopped and sautéed in butter. Mixed it all in a bowl. Gutted the pumpkin, hit with salt and pepper on the flesh and then stuffed everything inside. I capped it with another half cup of sharp cheddar and put the lid on it. I have the smoke rolling on the pellet pooper at 275. Going to smoke until the flesh is tender.

I would say "are you out of your gourd", but that would be a really bad pun. A very different approach to pumpkin. Interesting idea. We do no see a lot of examples of smoking vegetables on this site.

Congrats on the spin.....

I like it , but you know me I am all about smoking / cooking a little strange outside the box.

Sounds and looks like a great blend of items,

David

Thank you CS! It turned out great. After letting it sit for an hour cooling the rice finished cooking.
