First Time Shotgun Shells

Well y'all I decided to make some shotgun shells to go with the Birthday Brisket today. I stuffed the shells last night.
2 lbs 80/20 wagyu burger
1 lb turkey sausage
1/2 cup sharp cheddar
1/2 cup peper jack
Dano Butter Steak seasoning
And my brisket rub
Wrapped with turkey bacon.

I let them sit covered overnight in the fridge and they are now on the pellet grill at 300. I also sprayed them with duck fat and hit the outside with the same brisket rub.

Coating them with Sweet Baby Ray's original. I noticed that the bacon shrank back a ton. Thinking I might need to use beef bacon next time.

Well they taste good but a little tough to bite through. Thinking I either A. Didn't have enough bacon or B. Overcooked them. Overall I will definitely try this again.

Looks very tasty… nice job! And like @kilo charlie recommended… thinner sliced bacon when wrapping is a great way to go! Be it turkey, beef or pork! Again, nice cook! Now you mentioned brisket… gotta go find that thread!

They look great… just a suggestion…. Maybe back the temp down to 250*ish and see if that more to your liking. A bit slower cook I think would benefit you… Kinda like an ABT… give the bacon some rendering time vs cooking too hot. Just an option… but again looks mighty tasty!

Thank you. They taste great but I definitely think i need to increase the cheese for sure in them. If you don't got teeth you ain't eating them though. 🤣
 
Those things look killer! I've never made them fearing the tough bite.
Well to tell you the truth they are not that bad on the bite in fact that's the one thing my wife said she liked. You should definitely try them.
 
I didn't like the tough bite so the next time I make them, I'm going to cook the shells a little to soften them up but not enough that they would fall apart. Might be tricky but I'm gonna try
 
They sure look great and I've also read that parboiling them first helps with the bite.

Looks really good! Another thing to try. Is make the filling a bit loose. Add a little water. So, it will steam them while baking/smoking.
Or use 70/30 burger for a slightly higher fat to help soften the shells.
