My Aunt called me. She had some stuffed bacon wrapped boneless quail in the freezer to cook. They were prepared by a local butcher shop, Chris' Specialty Meats. I whipped up a quick marinade for the birds and let them soak in that for about 45 minutes while we prepped the rest of the meal.

First up-the board. Sbriciolona salami and Coppardo with Machego cheese and cantaloupe melon.

One of the sides for tonight-Konriko Wild Pecan rice. It pairs well with the quail.

The plate. Grilled stuffed Bacon Wrapped Quail, steamed broccoli with smoked gouda cheese, Pecan rice and a summer salad. Served with a nice Pinot Noir red wine.

I only made 1/2 the marinade. I wanted enough to get good coverage on the birds. This would be excellent on chicken drum sticks or thighs.
 
Those look awesome . Used to go to Iowa and hunt over German shorthairs . We always pulled the breast out of them , but after seeing this I'd love to do some whole / stuffed .

Don't be worried about taking yourself for a ride . Certainly worthy .

@chopsaw Thanks, These birds still had the leg bones and wings, but the back, thigh and breast bone was removed. not too difficult to eat. Try the marinade, it is really good. My friend that lives in Kansas has shorthairs. Neat dogs for sure.

that really looks tasty. i never had chance to try quail. is it similar to dove?

Woah. When I was a little boy in Texas, we had a sizeable quail population on our ranch. Fried, grilled, or fricassee were the methods in those days. You hit a home run ✔️.
