Spiced Ham with Homegrown Hot Peppers

    I've been dehydrating hot Hungarian peppers that I grow in the garden and thought I'd use some of them for a spiced ham. Nothing real special but it does taste good and I got a mess of lunch meat to enjoy.
    I started with a pork shoulder and removed the section of meat above the flat part of the bone. Stuffed it in some netting and rubbed it down with cure #1, salt and sugar and placed it in the frig.

    When I started the ham I wasn't sure what I was going to do with it, so I didn't add anything in the line of spices to it, that is till I started grinding peppers and I got the idea. After 10 day curing I pulled it out and rubbed it down with a little garlic and onion powder and a lot of the fresh ground pepper.. as much as would stay on the sucker. and stuck it back in the frig again for a 2 day rest.

    I thought about smoking it but wanted a more traditional taste (plus I really haven't had the time to smoke lately) so it was done in the oven over a pan of water at 200° for a few hours till it got to 154 and then pulled it to cool.
    Back in the frig till the next day when I could slice it.

    This came out real flavorful, and moist. The heat of the pepper is almost perfect for me.

    Does it have a cured ham taste like one that you could buy in a store for Easter or Christmas? You may have given me an idea for the holidays.

    Well technically it's not a ham cause a ham is the hind leg and this comes from the front shoulder. But yeah it tastes just like a ham.  For a holiday I think some brown sugar and smoke would be better then the hot pepper though.

    I agree, technically it might not be a true ham... but if it's as tasty as it looks who cares! [​IMG]

    Hope you don't mind my coming back to look at it now & then!!  It looks really good!

    It looks like BBB, but it tastes more like Ham?

    Just wondering, because it really doesn't matter---I love them both!

    X5    My wife said if I give this a try she will NOT give it a try (She's going on and on about being afraid that she will get sick over it...) [​IMG]   Then again  I'm thinking this just means more for me to EAT! [​IMG]

    Is it "ham like" enough to fool the in-laws for the holidays? They don't know what leg is what, I just need something that tastes like ham and I'll be a hero.
