It was one of those days that I needed a quick meal. Stopped by the store and they had whole chickens @ $0.99 per pound. Done!

Simple spatched bird. Salt pepper garlic powder. Into the mini. Not sure what temp it was running, as I didn't check. The bird was done in 1 hour so I'm sure it was cooking!

Made a batch of Old Rotten Potatoes and steamed broccoli.

Pretty basic. Standard simple cheese sauce, salt, pepper, mandolined taters. Put in a casserole dish and bake until the taters are done. Add some cheese on top until bubbly and brown. I almost added some nutmeg to them but didn't this time.

They were so good I am stuffed, and my wife had two bowls full. Don't tell her I said that!
 
Lol...Yeah I got to make a full to the top 9 X13. The kids will eat till they are gone. Nice job...JJ
 
The old rotten taters were fantastic with with two eggs and a couple slices of homemade bacon!
 
Man, that chicken looks beautiful. I was thinking about cooking a spatchcocked chicken on my wsm 18 by just lighting a full chimney, pouring it in the charcoal ring, leaving water pan out like you did. You think that set up will yield crispy skin?

Yep have done that many times on my 18" WSM.
 
Case that all looks good,I like the way you are using the new vortex,so I have to give a point for that.

Beautiful color on that bird Case.  Perfect! A spatchy is my favorite thing to cook on the mini with wings a close second.  The mini cooks everything well but always do a fantastic job on birds. 

That meal is fit for a king!  Point

Yeah the mini does a great job! My poor 18" WSM almost never gets used. The UDS hasn't been used in forever! The new 14" WSM is even collecting dust.
