Homemade Corned Beef Hash with Garlic Chili Sauce Fried Eggs.

Using up some leftover Corned Beef , I started by frying up some diced potatoes in a skillet seasoning them with Montreal Steak Seasoning and Cajun Seasoning. When the potatoes were about halfway done I added in the leftover corned beef and started on the fried eggs.

The eggs started in another frying pan with a heaping tablespoon of Garlice Chili Sauce, a splash of soy sauce and about 1/2 tablespoon butter, mixed together then the eggs cracked over the top of that mixture.

Tossed in a few green onions into the potatoes and corned beef and got that super crispy while the eggs finished.

Plated the corned beef and potatoes, topped that with a slice of Pepperjack Cheese and slid the eggs right on top. Made it pretty with a few more green onions.

Super simple, quick and easy and delicious AF!

With all these corned threads I was wondering when the hash was coming.
One of my favorites.

Honestly, I've never made hash before so I'm pretty satisfied with the past 24 hours involving my tacos, my sandwich for lunch and now the hash for dinner.
 
Delish, that looks fantastic. I think I'll do something like that for lunch, I've got leftover smoked corned beef, some soft boiled eggs and leftover salt potatoes in the fridge.

That looks tasty! I'm not up to speed on keto, but does that mean you don't eat regular potatoes as well?
I envision making that with scrambled eggs all in one pan.
I rarely eat white potatoes now. Although I have maintained my target weight for almost a year now after losing 45#. Crazy thing is- after going cold turkey on carbs and sugar, when I do eat them, I hate how I feel. So it is now rare that I do eat them. But the white potatoes; now that I know I can cook them, chill them for 24 hours to form resistant starches, then reheat to 150*F to eat them... I can eat white potatoes. I just have not yet.

I've never thought of a splash of soy sauce with fried eggs, i'm gonna give that try this weekend.

It definitely adds another layer of flavor to the eggs!
