St. Louis style spare ribs with KC rub, getting a good night's rest  for tomorrow's trip to the Smokey Mountain

..... forgot the water pan + it got windy! Temp isn't as steady as I'd like it to be and it only took me a little over an hour realize! Oh well, too late now because I'm not messing with the water pan now. Maybe when I foil. Not having the water pan in there with water makes a BIG difference as far as temp control goes.
