Ever since my wife made tacos a couple weeks ago I’ve been on a roll with Mexican flavors. Did fajitas last week. Tonight it’s a Chorizo / sirloin blend double decker slider on fried Mr Tortilla 1 net carb street taco tortillas. Layers of meat, jalapeño cheese sauce, fried jalapeños, charro beans, more meat and a little guacamole and pico de gallo. Started out by mixing 2 lbs of hot pork chorizo with 2 lbs 90/10 ground sirloin along with two small containers of diced hatch Chile. Made a cheese sauce of hot pepper cheese, quesadillas cheese , cream and diced jalapeño. Pattied up into 1/4 patties , cut up some jalapeños and some fresh adobo peppers from the garden and off to the griddle. These were straight dynamite
