My old friend Blind Willie is visiting, and today is his birthday, so there had to be ribs. Baby backs from Aldi's. They've really gone up, almost double what I paid last time. Rubbed them down with home made rub consisting of smoked paprika, onion powder, garlic powder, smoked chili powder, chipotle powder, ground mustard, cumin, ranch dressing powder (mainly for the MSG) and brown sugar. It has a great flavor and a nice slow burn.

Put them on at 3:30 and the smell is off the charts good. Running the WSM at 300°f using Jealous Devil briquettes and pecan chunks.

That last one was while it was warming up.

Here they are at about an hour and 40 minutes in.

Shooting for dinner at 7:30, we'll see if we make it. Probably gonna wrap at 6:30. Stay tuned!!

Oh, here's one of the dog just for fun.

It looks good, and I feel bad that the pup gets a ball rather than a rib!
Nice work,

That pup is cute. That rub sound spicy

I think we missed the plate shot. Too many brewski's? 😂

That little guy is going to enrich your life for many years!

What a cute little pup! Would love a plate shot, but a few more pics of the dog would be great too.

Sorry for the lack of pics of the finished product. Truth is, i totally overcooked them and was so mad at myself I didn't take any. Got complacent, set the smoker like I usually do and left it alone for 3 hours, as I didn't really feel like going out into the cold. Must've run away with itself because when I checked they were basically charcoal. What meat we could salvage was tasty, but overall it was a solid F for me. Live and learn.

Here's another one of the dog from a few weeks ago.

How many times have you read a comment to use a remote read thermometer with alarm?

Let’s see, in the 14 years I’ve been on this forum, probably a few thousand. Hell, I’ve probably made that comment a few hundred times myself. Call it a rookie mistake.
