This was done using my 4 rack Stainless Bradley. I brined the bird over night, then used 2hrs of Apple smoke.....total time in the Bradley was about 6hrs.
The bird was excellent, moist, smokey, and ...gone!

Turkey is my second favorite smoked meat. (Ribs of course is number one!) That bird you did looks fantastic. I bought four birds when they were so cheap last year at Thanksgiving. I think I'll buy 8 this year.

now thats a good looking bird there. Was that a pratice bird or was it for a good dinner. Which ever it sure looks yummy too.
