I finally purchased my first BBQ set and it's a second Webber that still has some good years ahead of it.
Being from California Safeway always has sales during big sporting events so I went with the tri tip which goes for 2.99lb for untrimmed. It requires a little labor but in the end it's more bang for you buck and they come in a twin pack. So I was able to get 8lbs of tri tip for 24 dollars!
I seasoned these bad boys with a rub I've been enjoying this far and that's it equal parts sea salt, black pepper, paprika, onion powder, seasoned pepper and brown sugar.
I let the rub sit for an hour and light the grill utilizing two zone cooking and on the coal side I wrap some wood chips in foil and place them on the hot coals.
I gives me a nice amount of smoke with the mesquite chips and really enhances the tri tip. I first sear both sides and then after that I set the tri tip on the non coal side till it reaches 115. During that time I start to baste the tri tip with my favorite kinders BBQ sauce on Both sides while I flip the meat. After 130 I throw the tri tip back on the coal side for additional seat and char and then I immediately wrap the tri tip in foil that contains butter and thyme.
The tri tip the rests for an hour( sometimes I'll go two) and during that time I flip the tri tip so it can absorb the juices on both sides. It's a bit of a process but the meat comes out great and this time I achieved a nice smoke ring which I was very proud of. Here's pics. Any tiips an tricks are welcome!
