End of Vacation Pulled Beef Chuckys

Nebraska - Go Big Red!
We had all of last week off so before we head back to work I am smoking some chuck roasts today. I got them on the smoker a little later then I wanted to but I am hoping to make some beef enchiladas tonight for dinner and beef sandwiches tomorrow night but we will see how the timing works out. I used an all purpose rub I had on hand and have them on the pellet smoker at 230.

The final meal of vacation was a delicious success and we have leftovers for lunch and extra meat for sandwiches tomorrow.

I pulled the chuckies after about six hours and both of them were around 200 degrees internal.

I shredded both them up with my hands and a fork with a chef knife. It was not as easy or fun as pulling pork but it got done.

I used a little under half the meat and mixed it in with sauteed onions and peppers. I rolled them up with some cheese to make some smoked beef enchiladas for dinner and they turned out great!

Love the pulled results and the enchiladas.
You're making me regret not picking up a 2 pack of chuck roast at Costco this afternoon.

Awesome . Enchiladas are the go to around here for leftover spinner chicken and beef .
