Went to Costco this weekend and picked up way too much meat lol, so decided to smoke up a loin.
Mixed up some recado roja and brown sugar and rubbed it down sat night KIMG1594.JPG
I decided to cut it into thirds to handle easier

Heated up the grill and got them in at 1:45

At 3:00 I splashed it with some apple cider vinegar

At 4:00 they hit IT 142°F

Wrapped and rested while I moved my coals under my grill grate

Not as much ring as I was expecting but it was tender and juicy

Thanks guys, in hind site I think I should have cross scored the fat cap for a little better smoke penetration and fat rendering into the run
 
For those that were wondering, smoked at 225° F for 2.25 hours over maple rested for 30 min or so while I finished up the veggies

Everything looks great! We do loins pretty regularly and yours looks perfectly cooked and delicious. Thanks for sharing.
