GFS finally had the 3 pack of spares , so I took a ride to grab a pack . Saw a small boneless pork butt that weighed in at 9 pounds .( EDIT : was 9 bucks , not 9 pounds . weighed around 5 pounds . ) Thought to myself , be a good one to do for Sunday .
Got it on the SmokeFire around 9:00 my time . Started at 200 , and been bumping temps 10 degrees or so . Currently running at 235 . Decided to trim up and vac pack the spares while I was at it .
Those 3 packs always have a sub par rack hiden in there . Came out on the small side after trimming , so another perfect size for today . Need to get my Monroe County mop simmering .

In for this as I have NO IDEA how long a butt would take in the Smokefire. Took 15hrs on average with MES...

A butt on the pellet pooper will be one of the first smokes when we go north.
 
Started to late , and hung up at 181 . Just went into the oven at 350 .
 
Tasty dinner you have in store Rich. Pretty cold here in Ohio today relative to the last few days. 39 this AM.
 
Had to finish the pork in the oven . Probed super easy , but was showing 185 on 3 different therms . Not sure what that was about . Maybe because it was boneless and I was in the seem left from that .
Sure was good though .

Little peak at the corn pre-cook . Butter and Kinders spicey garlic crisp .
Wrapped in foil and 400 degree oven . Normally goes on the grill .

Not the best looking plate , we like the sandwiches on
slider buns . Store bought creamy slaw and some Kinders hot honey BBQ sauce .
Son made homemade tater salad .
Used mayo , mustard and balsalmic vinegar . Kinders Cowboy butter
for the seasoning . He's kicks back side on flavors for this stuff .
I don't even try anymore .

3 to a pack . I used to clean them up and smoke whole , but started making better use of them .

I started cutting them down into St. Louis cut .
Tip of the knife is the cut line for that . Look for the fat seam .

Missed the one end a little , but I just adjust the knife .

So I end up with 3 nice racks .

So Monday morning I went through all the brisket and trim peices .
Get rid of all the cartledge and small bones out of it .
Ends up like this . 3 lbs. total .

Mixed up 3 lbs. of AC Leggs # 10 breakfast sausage . Added black pepper
and red pepper flakes .
fried up a couple patties .

sandwich for breakfast .

I have NO IDEA how long a butt would take in the Smokefire.
I've done 4 or 5 . It's never the same . This one was 181 @ around 7 hours in . Finished in the oven . People say small cooks faster . Never does for me .
Should also say I was spritzing with apple juice , which I don't normally do .
