Went to Costco this weekend and picked up way too much meat lol, so decided to smoke up a loin.
Mixed up some recado roja and brown sugar and rubbed it down sat night
I decided to cut it into thirds to handle easier
Heated up the grill and got them in at 1:45

At 3:00 I splashed it with some apple cider vinegar
At 4:00 they hit IT 142°F
Wrapped and rested while I moved my coals under my grill grate
Grilled up some peppers and onions
After the rest
Not as much ring as I was expecting but it was tender and juicy
Plated and ready to feast!
