I made a pork butt up for supper tonight. I started with a nice 7.5 butt rubbed it all down with mustard, then gave it a good coating of my rub that i use on all my bbq. I put the butt back in the fridge and let it sit covered in plastic wrap over night. I fired the mes up at 6.30 am and threw the rubbed down butt into the smoker. Let her sit in the mes till noon and checked the it. IT was sitting right around 162. I pulled the butt out and put it in tin pan with pineapple and juice, and warped it all up in foil and back into the smoker, checked the IT again at 430 and was sitting right at 206. Turned smoker off and let her sit for an hour and half in the smoker. Pulled it out and opened her up to a beautiful site. The bone slipped right out of the meat and it shredded up nicely. Served it up with buns and my home made BBQ sauce. The left over pineapple and juice got dumped into the home made beans.
