I loved Scrapple with ketchup, but there wasn't enough butter & syrup to make the Mush taste good.

Maybe I'm just from the wrong part of the world, but eating something made with the head, kidneys, liver and tongue just doesn't sound right.  Now I know lots of people love the stuff, but......all those ingrediants go into the dog food where I'm from   LOL

Yeah, it must have been because what we ate was good especially when it was fried until just a little bit crispy and I just remembered I have a loaf in the freezer from the last time I made some. Think I'll get it out to thaw and have me some for breakfast tomorrow!

OK---That sounds Great!!!

The only way we had it was in a bowl, at about the same consistency as Oatmeal. We kids hated it !!

Oh Well, My Mom was a Yankee cook!!!

If you use the head meat for scrapple, where did you get your meat for head cheese? Or mincemeat?

I made up a batch a couple years ago just for fun. Didn't have a recipe, and never had any homemade before, so don't know if I did a good job or not, but it was mighty tasty. Similar to Rapa brand, but much better flavor and texture. I just took some homemade breakfast sausage and put it in the food processor with some chicken livers. Pureed that until it was a fine paste. Then added in some already cooked grits until the consistency looked right. Put the whole kit and kaboodle in a loaf pan lined with Saran wrap and into the fridge overnight. Next day it was firmed up, so I sliced it into 1/2" slices, floured and fried.

We just made some a few weeks ago.  Butchered 5 hogs.  Really don't have receipe.  Cooked off bones. Picked meat off. Put in kettle.  Added cornmeal and pepper.  Don't think anything else went in it.  One guy tasted said was OK. Cooked about one hour after cornmeal added. Dipped out and put in pans.  Good stuff.  I only help so not sure of all the steps.

Tried it in PA. when I was Truck Driving , and almost puked , might have been it was a Truck Stop (although it was a really good one) , but the taste was too earthy for me...

Yup---I can dig it !! Even a Truck Stop can get lousy Scrapple.

I have eaten a bunch of home made Scrapple & most of them were great.

I've eaten some from local butcher shops and most of them were terrible.

The only really good store bought Scrapple I ever had was from "Hatfield Meats", and they sell that at nearly all of the large Chain Supermarkets in my area.

It's funny how the Butcher Shop that makes by far the best Ring Bologna I ever had, also makes the worst Scrapple I ever had!!!

I've never had scrapple, but admit it sounds great and will try Bear's recipe.
