Looks great as usual but I have a question.

Are you sextuplets?

Where do you find the time to make all the sausage you make....

I got the elk stuffed this morning with my water stuffer.

A friend of mine asked how do the big companies get the casings so soft and chewy?

Easy

Soak the casings.

Hanging the sticks in the 6 rack.

Going with some heavy smoke so going to use a smoke generator that is inside my Traeger.

Using hickory/maple pellets.

Smoking

Lid on so the pellets dont flame up.

Ready to smoke

Going to give the sticks another 20 min round of smoke.

Oh yeah your on the road to being hooked on sausage. I like sausage because you can do so much with it, smoke, bbq, cold smoke, age, dry on and on.

Took good color and smoke.
