Was supposed to cook these yesterday on the fourth but the 9 kids at the house wanted to go out on the boat. Had hot dogs instead. The three slabs of stl cut ribs were smoked today instead. Fired up the stick burner for the second time in as many smokes. Smoked between a steady 250 - 260 with apple. Was just me and the better 2/3 as the hord of kids went to Springfield for a birthday gathering. They were skinny slabs compared to the costco packs I usually buy. Only took 3.5 hours to finish. Turned out perfectly with a bite through and not fall off bone. Did not wrap this time.
