Sausage four pack!

    Wife is off running a half marathon. Someone has to exercise around here!

    Which means us boys can take over our tiny house with sausage making equipment.

    Tonight the Sous chef and I ground 20 pounds of pork butt. Mixed all the spices and then cleaned the mess up.

    Tomorrow we'll stuff and smoke!

    One fresh sausage, three smoked. More to follow, here's a few shots of Q-view to hold you over until tomorrow.

    This hobby requires a bunch of stuff! I have to store all my meat smoking stuff in the garage. I have found these totes to work the best for me.

    Chief in charge of grinder reporting for duty.

    Paid $1.19 a pound, best price I've ever seen in our neck of the woods.

    WooT!! A touch of breakfast sausage with breakfast? Bisquit & Sausage gravy ...... You're right it might make him sick, you don't want to spoil him.

    I use a bone in cryo twin pac and usually after de0boning I get 17 pounds, 3 @ 5 lbs each, then 3 pounds to play with.

    I usually buy the bone in also, but they have been 3 times the amount of boneless lately even when not on sale. Felt pretty good about this cryopac, not much waste.

    Lots of spices mixed tonight, nothing for breakfast, at least not until it spends some time in the smoker!!!

    Well it's about time to get stuffing. First I'll stuff the sausage that gets smoked. Then what doesn't.

    Woke up to high winds and rain. Ought to be a hoot keeping the smoker adjusted today!

    Been a slow go today. Kid stuff, dog to the vet. But getting some things done.

    Taylor ham stuffed and hanging in the walk-in until I can get it into the smoke.

    Pepperoni stuffed in corn husks. Also into the walk in for now.

    Still have ten pounds, two different sausages to stuff!

    Have to go run another kid somewhere...
