Saturday's smoke

    Kind of have the need to smell smoke and wifey needs some Christmas presents for her bosses sooooooo

    These are going on the Lang 36 tomorrow

    Couple of butts and chuckies

    and a piece of pork loin  Injected last night and rubbed this morning

    If I can get this new puter working at the farm I'll post some Qview

    Meat went on at 8 am  cloudy, windy, foggy everything wet  GREAT WAY TO START!

    Thanks everyone

    This is 3 hours in,  temps steady at 240.  I added a piece of BoykJo's sausage I had left in the freezer for lunch, did a spritz and moved everything around a bit

    Everything is kind of brown now but we have blackberries, blueberries, peaches, mayhaws, plums, figs, pecans, apple trees, muscadines, and a couple of vegetable gardens.   Liz and I plant a couple of rose bushes every year for valentine's day.

    Wrapped the loin at 150 and removed from the smoker at 160  took about 5 hours.  Foiled the chuckie at 165 and removed from the smoker at 180.  Both got wrapped in towels and are resting in an ice chest. 

    This qview is of the butts when I removed them from the smoker at 177.  I wrapped them in foil and returned them to a 250 degree oven.

    Hope to have some money shots in an hour or two,  getting pretty hungry!

    The Loin   tender, moist and the injected marinade was a real plus.  Absolutly delicious

    The butts are stalled at 170  going on 9.5 hrs but that's a good thing.

    Ok last of the Qview

    Kicked the oven temp up to 265 and went to bed.  Temp alarm went off at midnight (200 internal temp)   That makes 16 hrs for the butts

    Wow Al it is a great smoke you did. you got the whole forest in your back garden beautiful really amazing and you got supply of wood on hand.

    Today I am tasked with cutting some more Pecan so it has time to dry for the next gathering in October.  Oh well, at least I can look forward to pulled pork sandwiches for lunch!
