Hey Guys,

Just after Christmas, rib roasts were on sale for 50% off at the local grocer, so we picked a couple up. Looked in my freezer the other day, and totally forgot I had one lol. This would be my first time smoking beef. Have done lots of chicken and pork, but was a bit leery about beef with the $$. So I pulled this 5 pounder out, rubbed with olive oil, salt, pepper, garlic, onion powder, with rosemary sprigs. Cooked at 250 with hickory until IT was 140. Pulled and let rest for 20 min. It was AMAZING! By far, the best meal I have cooked yet. Super juicy and tender, and the flavor was explosive! Will be doing this again soon!

That looks amazing. Love the rustic look of just putting the whole sprigs on the roast rather than grinding them up. I think you just inspired my next smoke :)

A well done roast...I mean...It looks great! I have to stop looking at these picture while I am waiting for my food. They might cause me to start grazing too early.
