On Feb 1 i made some dry salumi in UMAi 50mm bags.

Took 2 out of the UMAi bags and decided to red pepper coat them.

First one rolled in red pepper flakes.

Gotta roll it a few time to get the fat to warm up.

Second roll in the korean crushed red pepper.

Now put into new UMAi 50mm, tie both ends and back in fridge.

Im going a few more weeks, still kinda soft in the middle.

Very nice! One of the versatilities of umai bags.
Yeah the UMAi bags are great if you dont have the means for a dedicated cure cabinet and all the equip.

UMAi
Mix, stuff find some warm to ferment, then into your home fridge.
