Country Summer Sausage

9 pounds sirloin.
1 pound pork fat
5 Tbsp pickling salt. fell free to adjust to your taste.
2 tsp cure 1
2 tsp ground coriander
2 tsp garlic powder
2 tsp mustard powder (Colemans)
2 Tbsp sugar
2 Tbsp black pepper
2 Tbsp white pepper
4 Tbsp corn syrup (clear)
2 1/2 Tbsp Whole mustard seed.
2 cups very fine NFPDM…..Yes you can grind finer if needed.
2 cups very cold distilled water

Casings of your choice.

Cube the beef and pork, Grind thru med plate….1 time.
Mix all the dry with the 2 cups of water into the meat. Dont forget the corn syrup. Mix well and get good protein extraction.

If you choose to stuff right away, hang or lay the chubs in the fridge overnight.
Smoke your normal way.

Nice! I need a good summer sausage recipe. This may be the year I tackle some with a homemade recipe. I have a ton of ground venison and feral hog meat to make sausages with.

Any decent try seasoning (sugar, brown sugar, etc.) substitute for the corn syrup or is that a mandatory piece? I will look up a conversion if I know a substitute can happen :)
I rarely have corn syrup and have no use for it but have the other items.
