I have been cooking pp for concession stands for my son's baseball team for a few years.

Tournament tomorrow, they wanted pp to sell. It's a big seller for them.

So I loaded the basket with RO and hickory.



Fired up my mav. 732. Reading way off. It's not the probes either. I have a therm in the barrel but it's off too. Maybe 25 degrees. So I did this to get a reading.


Don't really know how accurate that is.


Here's the pork cooking anyway.



Sure hope it turns out ok. With being butts it should.

Looks like a great start! How many pounds of finished product do you sell?
I have no idea.  For a one day tournament I cook 3 butts, for a 2 day I do 6 butts.  They sell out everytime.
 
Tasty looking pp,way to leave them always wanting more!

Thanks.    Its always a guessing game on how much will be sold.   I would rather sell out than have abunch leftover.
 
Looks terrific, Adam. I am doing some PP for a Gyro event. Can I pick your brain? Did you reheat the pp or just keep it warm? How did you keep it warm for serving? I was thinking of cooking it overnight and keeping it warm in crockpots.
