So here I am - Saturday afternoon and all is good. I've got a brisket and 3 racks of ribs on my Masterbuilt XL. The internal temp dropped to 180 and would not rise even with the gas on HIGH.
I opened the door to check the probe from Maverick 732 and I found the powder coating had de-bonded and sagged down and covered the probe and the brisket (pictured). Has anyone experianced this?

EC, morning....  Is that tar build up that is sagging ???  On an older smoker, the PC should have sagged when it was new if it was going to come off I would think....  but then "what do I know ?"....   Needless to say, "That is interesting"...   Dave

Yeah I dont think that's powdercoating, the coating is only on the outside as far as I know. It is some type of tar build up as said, I would imagine, i have  to knock mine down all the time.

Finally getting back to this - I had to return the smoker - cudo's to Cabela's for making it a easy return (45 days old). I feel pretty positive that it was the power coating that came off. It felt like and had the consistancy of plastic wrap - kind stretchy. The cabinet was rusty underneth, I've added a picture. The challenge now is to find another - I'm thinking about a stainless steel gas smoker - anyone have any idea's?
