Fired up some pork steaks for the fourth . Ended up using the Genesis 310 . Weather was miserable and the gas grill does a good job .
Soaked over night in zesty Italian dressing .
I get the grill screaming hot . I go right from the soak to the grill , and do the first flip pretty quick .
That way both sides get a good sear and seal up the inside .
The sugars in the dressing start to caramelize .
Starting the sauce .
I did the ribs the day before on the SmokeFire .
Getting a reheat and some sauce .
I keep saucing and flipping . Looking to get that fatty edge charred and crispy .
Good color , and nice and tender .
I pull them and into a covered dish . Then in the oven at low heat .
About 200 . Just holding until the rest is done .
That edge is the part I look for .
I haven't done BB in a long time . This slab was $10.00 compared to $28.00 for spares .
I had to wrap for an hour , because they didn't want to get tender .
That did the trick . To me ribs are always better the next day , and the SmokeFire makes a great rack of ribs .
