Pork steaks and ribs for the 4th

Fired up some pork steaks for the fourth . Ended up using the Genesis 310 . Weather was miserable and the gas grill does a good job .
Soaked over night in zesty Italian dressing .

I get the grill screaming hot . I go right from the soak to the grill , and do the first flip pretty quick .
That way both sides get a good sear and seal up the inside .

The sugars in the dressing start to caramelize .

I did the ribs the day before on the SmokeFire .
Getting a reheat and some sauce .

I keep saucing and flipping . Looking to get that fatty edge charred and crispy .

Good color , and nice and tender .

I pull them and into a covered dish . Then in the oven at low heat .
About 200 . Just holding until the rest is done .

I haven't done BB in a long time . This slab was $10.00 compared to $28.00 for spares .
I had to wrap for an hour , because they didn't want to get tender .
That did the trick . To me ribs are always better the next day , and the SmokeFire makes a great rack of ribs .
Held over night and reheated on the Fourth .

Had my plate a bit to full , but I managed .

The ribs were completely tender . I was surprised . I picked a rack that didn't have loin meat on it ,
so that helped .
Daughter made the pasta salad . It was good .
Italian dressing , pepperoni , peppers , black olives
cherry tomatoes and some motz cubes .

Son made the mayo bread . That's always good .

That's a plateful of great looking food Rich! I haven't had pork steaks in forever...maybe ate too many of them for awhile. That bread looks delicious!

Maybe loaded to many ? Lol .

Looks good Rich. We did spares on the fourth as well at the firehouse. They just went on sale here for $0.99/# so I am stocking up again.....
That's a great price . I bought the BB's because they were cheaper .
They turned out great . Nice and tender .

The color on both is awesome!
I used to get BB’s w/o the loin meat from WFF, but not so much lately, so I’m back to STL’s. But for that price I would buy the BB’s & cut the loin meat off, and cook it separately.

That pasta salad is talking to me, been a while.
The salad is great on a hot day . You can really make it a meal depending on what you add .

Thanks . Yup , love that charred fatty edge . Brown sugar and hickory BBQ sauce cooked on really adds to it .
 
There’s no better way to celebrate the 4th than right there! I’d take a loaded plate of everything you got and the pasta salad just screams summer to me!
