Cut a pork loin in half. Did one with sriracha and a beef rub. The other with yellow mustard and a pork rub.. the sriracha was better. Slight heat, and a savory flavor. The other was pretty mild. Used one chimney of charcoal, with two cherry chunks. Indirect, with water pan. About two hours removed and foil covered. Temp was right at about 145.
